Natural Preservatives Nisin
Brief introduction
Nisin is a natural antimicrobial agent used as a preservative in heat processed and low pH foods. According to the Food Chemical News Guide (a reference guide to the uses of foods additives permitted under Federal Law), a nisin preparation is a concentrate of dry material derived from the controlled fermentation of a naturally occurring milk bacteria Streptococcus lactis. This bacterium contains nisin, a group of related peptides (partial amino acid chains that make up proteins) with antibiotic activity.The chemical nisin cannot be synthesized artificially, so the nisin-producing bacteria are basically farmed for their synthesis of nisin.

Character:
Nisin is white color powder with hydrous potency 1000IU/mg. It is stable in room temperature and acidity condition even heated. It can endurance 30 min in pH=2.0 , 121 °C and 15 min in pH=3.0 , 121 °C . But at the high pH, the stability of activity can be greatly affected.

Stability: is very stable under the condition of the room temperature or under the condition of acid-heating. If heated for 30 minutes at PH2.0/121°C, it is still very stable.
Security: Nisin is a polypeptide. It will be broken down into amino acid by proteinase in the digestive system by being eaten.Also, it won’t change the normal bacterial community in intestine or cause drug resistance of using other antibiotic substance. Moreover, it doesn’t appear chiasmatic resistance with other antibiotic substance.The study of microbes toxicity of Nisin shows that it owns high security for having no toxicity or pathogenicity.
Toxicity: GRAS(FDA § 184.1538, 1994); ADI 33000 IU/kg (FAO/WHO, 1994)
Application:Milk, dairy products, meat products, poultry, aquatic products, can food, fruit juice, plant protein, baking food, fast food, beverage drinks, cosmetics, medicine and health care products. produce 5% Nisin solution of pure water, mix equably into food by grading extension method; it can use with other antiseptic, suggestible dosage 0.03-0.2g/kg.
